Guacamole Deviled Eggs
A fun and spicy twisted on a classic-- Guacamole Deviled Eggs are the perfect party appetizer.

- 6 eggs
- 1 ripe avocado pitted
- ½ jalapeno minced very fine
- ½ tsp. salt
- 2 tbsp. minced shallot
- 2 tbsp. finely chopped cilantro
- 1 lime juiced
Hard boil eggs. (Everyone has their own methods for hard boiling, but I add the eggs to the water, place it on the stove and bring it up to a boil. As soon as it starts to boil, cover it and turn the heat off. Wait 15 minutes and the eggs will be perfect).
Peel eggs and slice in half vertically.
To a small mixing bowl, add cooked yolks, cilantro, avocado, jalapeno, salt, lime juice, and shallots. Mix well with a fork until creamy and smooth.
Fill the cooked egg whites with your yolk mixture using a spoon, pastry bag, or whatever is easiest.
Optional: Top with a thinly sliced piece of jalapeno.
