Guacamole Deviled Eggs

A fun and spicy twisted on a classic-- Guacamole Deviled Eggs are the perfect party appetizer.

Ingredients

  • 6 eggs
  • 1 ripe avocado pitted
  • ½ jalapeno minced very fine
  • ½ tsp. salt
  • 2 tbsp. minced shallot
  • 2 tbsp. finely chopped cilantro
  • 1 lime juiced

Instructions

  • Hard boil eggs. (Everyone has their own methods for hard boiling, but I add the eggs to the water, place it on the stove and bring it up to a boil. As soon as it starts to boil, cover it and turn the heat off. Wait 15 minutes and the eggs will be perfect).
  • Peel eggs and slice in half vertically.
  • To a small mixing bowl, add cooked yolks, cilantro, avocado, jalapeno, salt, lime juice, and shallots. Mix well with a fork until creamy and smooth.
  • Fill the cooked egg whites with your yolk mixture using a spoon, pastry bag, or whatever is easiest.
  • Optional: Top with a thinly sliced piece of jalapeno.
