- 1 tbsp. avocado oil
- 1 lb. ground pork
- 1 tbsp. fresh grated ginger
- 3 cloves garlic minced
- 20 oz. rainbow coleslaw mix
- 2 green onions trimmed and sliced
- ¼ cup soy sauce
- 2 tbsp. rice wine vinegar
- 1 ½ tsp. sesame oil
Heat avocado oil in a large deep skillet over medium heat.
Add ground pork to the pan and brown, breaking up the meat with a wooden spoon or spatula as it cooks. It should take around 6-8 minutes.
When the pork is finished cooking, add your grated ginger and minced garlic to the pan. Cook until it is fragrant, around 2 minutes.
Add in coleslaw mix and chopped green onions and cook for 5 minutes.
When cabbage has softened, stir in soy sauce, sesame oil, and rice wine vinegar. Cook for one additional minute, remove from heat and serve.
