Mini Pancakes (Silver Dollar Pancakes)

- 2 cups flour sifted
- ½ cup sugar
- 4 ½ tsp. baking powder
- 1 tsp. salt
- 2 eggs
- 2 cups milk
- ¼ cup butter melted
Sift flour, sugar, baking powder, and salt into a large bowl.
In a separate bowl, beat eggs.
Mix in milk, and add melted butter.
Stir wet ingredients into dry ingredients until just blended.
Heat nonstick griddle over medium high heat. You can add butter or cook on the pan bare.
Once hot, cook pancakes until lightly brown (around 30-45 seconds per side for small pancakes).
