Zucchini muffins are great on their own.. add in sweet chocolate chips and you have a winner!
PREP TIME: 15 MIN
– 1 ¾ cup flour – ½ cup sugar – 2 teaspoon baking powder – 1 teaspoon baking soda – 2 teaspoon cinnamon – ½ teaspoon salt – ¼ cup melted butter – 1 teaspoon vanilla – 1 medium zucchini grated – 3 ripe bananas mashed – 2 eggs – 1 cup chocolate chips
COOK TIME: 25 MIN
INGREDIENTS
In a large bowl add bananas and mash with a fork. Add grated zucchini, eggs, vanilla, and melted butter.
In a separate bowl combine dry ingredients.
Gently fold dry ingredients into wet ingredients. Fold in chocolate chips and pour batter into a lined muffin tin. Each muffin should be about 3/4 full.
Bake muffins for 25-30 minutes, or until tops are brown and a toothpick comes out clean.
