Rice Stuffed Zucchini

This casserole features tender zucchini boats filled with spiced ground beef and rice swimming in marinara sauce.

PREP TIME: 20 MIN

1 – 3-4 medium-sized zucchini – ½ yellow onion, diced – 1 lb. ground beef – ½ cup rice (like basmati) – 2 cups plus ¼ cup of marinara sauce – 1 cup water – ½ teaspoon allspice – ½ teaspoon salt – ½ teaspoon garlic powder – ½ cup fresh grated parmesan cheese – 1 tablespoon olive oil

COOK TIME: 30 MIN

Step 1

Prepare the zucchini by trimming and scooping out the middle.

Prepare the Filling.

Stuff  the zucchini halves with prepared filling. Place in a baking dish filled with marinara.

Top with cheese.
