– 1 bone-in chicken breast – 4 tablespoon butter – ½ teaspoon thyme – ½ teaspoon rosemary – 1 teaspoon salt – 2 cloves garlic, minced – ½ lemon + zest – 2 tablespoon flour – 1 small onion, roughly chopped – 1 cup chicken stock – ½ teaspoon chicken bouillon

Combine ingredients for the compound butter.
Coat chicken with butter over and under the skin.
Place chicken on chopped lemons and onions and bake at 425 for 45-60 minutes.
In a saucepan, combine chicken drippings and flour to make a roux.
Add chicken stock and whisk to make gravy.
Serve chicken with gravy and mashed potatoes.
