Instant Pot Shrimp Scampi
Scampi in the Instant Pot
Buttery lemon sauce, loads of fresh garlic, tender shrimp, all swirled together with capellini pasta. This 2-minute Instant Pot Shrimp scampi is easy-peasy (even lemon squeezy), and it sure is delicious!
PREP TIME: 20 MIN
– 8 oz. angel hair pasta – 1 lb. frozen raw shrimp – 1 ½ cups chicken stock – ¼ cup white wine – 6 garlic cloves, minced – 4 tablespoon butter – 2 tablespoon olive oil – ½ teaspoon salt – ¼ cup fresh parsley – 1 lemon, juice and zest

Let's Get Cooking!
Saute garlic in butter and oil until fragrant.
Deglaze pan and add pasta, criss crossing as you go.
Add shrimp, broth, and lemon!
Set to High Pressure for 2 minutes.
Stir in fresh parsley and serve!
