This is a creamy and savory sweet potato recipe for those of us who want something different than the classic sweet potato casserole.
– 3 sweet potatoes large – 4 tbsp. butter – 1 tsp. sea salt – 2 tsp. Herbes de Provence
Set oven to 375 F. Bake sweet potatoes on a cookie sheet for 45 minutes or until you can easily pierce them with a fork.
Peel off skins and place the potatoes in the bowl of a mixer and add 4 tablespoon of butter cut into chunks. Add salt and herbs.
Mix until everything is combined. In a buttered baking dish, pour potatoes and then bake at 375 for 10 minutes.
