Mexican Tuna Salad

This Mexican Tuna Salad, or ensalada de atun, is fresh and flavorful. Full of chopped veggies and seasonings like cilantro, lime, and cumin.

– 2 5 oz. tuna cans drained – ¼ cup mayonnaise – ¼ cup red bell pepper small dice – ¼ cup frozen corn – 2 tbsp. cilantro chopped – ¼ cup red onion small dice – 1 lime juiced – 1 tsp. cumin – 1 jalapeno finely diced

Step 1

In a mixing bowl, add drained tuna and mash with a fork to break it up slightly.

Step 2

Add diced red onion, diced bell pepper, chopped cilantro, corn kernels, finely chopped jalapeño pepper, lime juice, cumin, and mayo.

Gently toss everything together until the ingredients are evenly coated with the dressing.
