Super simple to make, Lazy Lasagna Soup, is a warm you up meal full of italian flavors! Try this easier to make version of lasagna you can enjoy by the bowl!

– 1 lb. ground beef – 1 tbsp. olive oil – 1 medium onion, diced – 4 garlic cloves, minced – 6 cups chicken stock (or beef stock) – 28 oz. can crushed tomatoes – 8 lasagna noodles (broken into 1 inch pieces) – 1 tbsp. italian seasoning – ½ cup shredded mozzarella cheese – 2 tbsp. parmesan cheese – ¼ cup ricotta cheese – salt and pepper, to taste

In a large soup pot, heat oil and brown ground beef along with garlic and onions. 

 Add crushed tomatoes, spices, and chicken stock. Bring to a boil.

Once boiling, break up lasagna noodles and place into the broth. Simmer until tender. 

While the noodles are cooking, prepare cheese topping. In a bowl, combine ricotta, mozzarella, parmesan, salt, and pepper. Set to the side.

Once lasagna noodles are done to your liking, ladle into bowls and scoop a small portion of the ricotta mixture on top.
