These no drain mashed potatoes soak up all of the chicken stock while in the pressure cooker and are full of flavor and creaminess!
– 2 lbs. Potatoes peeled – 1 cup Chicken Stock – 4 tbsp. Butter – ½ cup Whole milk or heavy cream – 1 tsp. Salt
INGREDIENTS
Wash and peel potatoes and cut them into approximately 2 inch chunks. Place potatoes in a clean bowl and cover with cold water.
Drain and add to pressure cooker Add chicken stock and attach the pressure cooker lid. Set to 10 minutes at high pressure.
Allow to natural release. Pour into a bowl and add butter and cream.
Mash to desired consistency and add salt and pepper to taste.
