Seasoned with allspice and scotch bonnet peppers-- jerk chicken is full of flavor and heat!
PREP TIME: 5 MIN
– 2 lbs. Chicken Thighs – 2 tbsp. olive oil – ¼ cup white vinegar – 1 tsp. cinnamon – 1 tsp. nutmeg – 1 teaspoon allspice – 1 small onion, peeled and quartered – 4 garlic cloves, peeled – 1 inch piece of ginger, peeled – 2 habanero peppers (or scotch bonnet peppers) – 1 tsp. salt – 1 tsp. black pepper – two limes, juiced – ¼ cup brown sugar – ½ cup soy sauce – 4 green onions, trimmed – 2 tbsp. white rum
COOK TIME: 20 MIN
INGREDIENTS
Add jerk marinade ingredients to a blender or food processor.
Blend until smoth.
Pour on top of chicken thighs and set IP to HIGH for 10 minutes.
Allow to natural release.
Broil for 10 minutes if desired.
