Kotosoupa Avgolemono is a traditional Greek soup with chicken and rice in a creamy egg and lemon sauce. Great topped with fresh herbs.
– chicken stock – fresh squeezed lemon juice (about 2 lemons) – salt and pepper – egg yolks – fresh dill – white rice – chicken breast
Simmer some chicken stock.
1. In a blender, add egg yolks, lemon juice, ½ cup of cooked rice, and 1 cup of the hot stock. Puree until smooth.
Pour this pureed mixture into the simmering stock and add in the rest of the rice and your chicken.
Simmer until it has thickened to desired consistency, appx. 10-15 minutes.
1. Season with salt and pepper to taste, along with your fresh chopped dill. Stir and serve.
