Deviled Eggs with Avocado

A fun and spicy twisted on a classic-- Guacamole Deviled Eggs with Avocado are the perfect party appetizer.

– 6 eggs – 1 ripe avocado, pitted – ½ jalapeno, minced very fine – ½ tsp. salt – 2 tbsp. minced shallot – 2 tbsp. finely chopped cilantro – 1 lime, juiced

INGREDIENTS

Hard boil eggs, peel, and slice in half. 

In a small mixing bowl, add cooked yolks, cilantro, avocado, jalapeno, salt, lime juice, and shallots. Mix well with a fork until creamy and smooth.

Fill the cooked egg whites with your yolk mixture using a spoon, pastry bag, or whatever is easiest.

Top with a thinly sliced piece of jalapeno.
