– 12 eggs – 1 cup milk – 1 ½ tsp. salt – 1 tsp. pepper – 2 tbsp. butter – 2 cups broccoli, chopped small – 1 medium onion, diced – 2 cups shredded monterey jack
COOK TIME: 30 MIN
Saute onions and broccoli in a skillet with melted butter until halfway cooked, about 5 minutes.
In a large mixing bowl, crack one dozen eggs. Add in milk, salt, and pepper. Whisk vigorously until combined.
Pour veggie mixture into a baking dish. Sprinkle half of the shredded cheese on top.
Pour egg mixture over top, and then sprinkle on the remaining cheese.
Bake in a 375 degree oven for 30-35 minutes.
